Svensk baljväxtfärs now in three of Garant’s vegetarian dishes

Svensk Baljväxtfärs, can now be found on store shelves at both Hemköp and Mat.se through Garant, Axfood’s own brand. The product has been developed at Axfoundation’s test farm and development centre, Torsåker Farm. Three new vegetarian meal solutions based on the mince made from Swedish-grown protein crops make their debut today. The products meet both the growing interest in more sustainable consumption and a sharp increase in demand for locally produced, herbal products and vegetarian and vegan products without soy.

The three meal solutions – taco mince, bolognese and lasagna – are now going on sale at selected Hemköp stores and Mat.se. They represent a continuation of the development work carried out by Axfoundation within the Future Food programme, which resulted in an initial launch together with Urban Deli in Stockholm. After more than a year of sales to restaurants and catering companies, production is now being scaled up and reaching food retailers with the help of Garant.

The minced meat alternative consist of four Swedish-grown legumes and oilseeds: grey peas,broad beans, sweet lupine and residues from the production of cold-pressed rapeseed oil (oil, seed and shell residues) with a touch of salt. Nothing else. The meat alternative is completely free of soy. Meat alternative bind nitrogen from the air in the soil. This reduces the need for fertilisers, which require a lot of energy to produce and contribute to the eutrophication of our seas. Nitrogen also improves the quality of the soil. The ingredients are rich in protein and fibre and have not been processed by texturing or extrusion. The dishes are prepared for Garant by chefs at Grönsakshallen Sorunda’s kitchen in Hässleholm, which normally delivers food to restaurants.
